Menu Plan Monday 5/12 - Dairy Free

[YUM!!! These were excellent!]
black beans
mac-n-chreese (hopefully this will be descent)

shipwreck casserole
(UPDATE: I made this last night with venison and it turned out dry and not very flavorful. If you try this and it works out for you, let me know and I'll cook again with ground beef. Thanks!)

black eyed peas
madarin oranges

bourbon chicken
white rice
green beans

grilled tilapia w/lemon dijon cream sauce
steamed broccoli
french fries

pinto beans
black eyed peas
green onions

baked potatoes
baked sweet potatoes
honey carrots
corn on cob

The Gyros look great! I added them to my menu for the week. For the shipwreck casserole have you found tomato soup that is dairy free or do you make your own?

It appears that Campbell's Healthy Request Tomato Soup is dairy free... unless the "flavoring" is derived from dairy. I haven't called the manufacturer about it yet... Thanks for the heads up!

Thanks for the post over at We, too, are dairy free because of allergies. Not as severe as yours sounds. We had actually kept some milk products in until a month or two ago. We met with a RD and she wanted a complete avoidance to rule out any additional allergies. (My youngest doesn't test allergic, so avoidance is the only way we can confirm the allergy.) It's actually been a good thing that we are being so strict. I can see continual improvements!! Nice "meeting" you!! ~Jenna

dairy free, egg free cake
known as 4-H cake/depression cake/crazy cake/wacky cake

1.5 c flour
3 Tb cocoa powder (optional)
1 c sugar
1 tsp baking soda
1/2 tsp vinegar
5 Tb oil
1 tsp vanilla
1 c water

oven 350 degrees. combine ingredients and pour into greased 8" or 9" square pan. bake in oven until done, about 35 minutes?


vanilla cake: omit cocoa, double vanilla

spice cake: omit cocoa. add 1 Tb pumpkin spice

orange cake. omit cocoa & vinegar. use orange juice for the water

lemon cake: omit cocao. use lemon juice for vinegar. can add some lemon extract.

and for icing, i have found some pillsbury and betty crocker tubs of icing that just contain soy. hope that helps! these cakes are great, moist, and nobody can tell they are dairy/egg free.

I have made that cake too, but I never knew about all the substitutions!!
